Mulled Wine

Ingredients:

Red wine   1500 ml

Sweet vermouth   750 ml

Angostura bitters   100 g

Orange peel, from 2 oranges   45 g

Lemon peel, from 1 lemon   15 g

Clove, whole   2 g

Green cardamom, about 6 whole   2 g

Cinnamon sticks, about 4 whole   15 g

Nutmeg, chunks   6 g

Star anise, about 10 whole   10 g

Vanilla bean, about 3, split   10 g

Brown sugar   100 g

Methods:

1. Combine all ingredients in a large pot and simmer
Bring to a simmer over high heat. Then cover and reduce heat to low.

2. Steep on low heat, covered, for at least one hour.
