Cajun Butter Chicken Thighs

Ingredients
For the Cajun Seasoning
½ teaspoon Cajun seasoning blend
2 teaspoons light brown sugar
1 teaspoon sweet paprika
1 teaspoon dried oregano
1 teaspoon salt
¼ teaspoon fresh ground pepper
For the Chicken
8 boneless, skinless chicken thighs
4 tablespoons butter, divided
1 tablespoon vegetable oil
3 cloves garlic, minced
½ cup low sodium chicken broth
chopped fresh parsley, for garnish

Combine: In a shallow plate or shallow bowl, combine the Cajun seasoning, brown sugar, paprika, oregano, salt, and pepper. Mix it all together to combine.
Season: Rub the seasoning all around the chicken thighs.
Heat: Set a large skillet over medium heat. Add 1 tablespoon of butter and 1 tablespoon of vegetable oil to heat up.
Cook: Add the seasoned chicken thighs to the hot oil, smooth side down. 
Cook the chicken for 6 minutes.
Flip and continue cooking: Flip the chicken over and continue to cook for 6 to 7 more minutes or until cooked through and no longer pink. Check for doneness with an instant read thermometer. Chicken is done when internal temperature registers at 165˚F.
Rest: Remove chicken from skillet and set aside. 
Sauce: Return the skillet to the stove and set it over medium heat. 
Add the remaining butter to the skillet and let it melt.
Stir in the garlic and cook it for 30 seconds. 
Whisk in the chicken broth and scrape up all the browned bits from the bottom of the pan.
Bring the sauce to a boil and let it cook for 2 minutes, or until reduced. Whisk frequently. 
Top and serve: Drizzle the sauce over the chicken thighs.
Garnish the chicken with parsley and serve.

Gingerbread Cookies

 ✅Ingredients


• 6 tablespoons salted butter, softened

• 1/4 cup brown sugar, tightly packed

• 1/3 cup dark molasses

• 1 large egg

• 3/4 teaspoon ground cinnamon

• 3/4 teaspoon ground ginger

• 1/2 teaspoon ground allspice

• 1/2 teaspoon ground cloves

• 1/2 teaspoon baking soda

• 1/4 teaspoon salt

• 1¾ cups all-purpose flour

1️⃣ 00:00:12 - Use a hand mixer or stand mixer to cream butter and brown sugar until fluffy. Mix in molasses, egg, cinnamon, ginger, allspice, cloves, baking soda, and salt until smooth, scraping the sides as necessary. Add in the flour until well incorporated.


2️⃣ 00:01:22 - Remove the dough from the bowl and wrap the dough in plastic wrap. Refrigerate 1 hour.


3️⃣ Preheat oven to 350 degrees. Line a baking sheet with parchment paper.


4️⃣ 00:01:36 - Roll the dough out to 1/4-inch thickness on a lightly floured surface. Use a gingerbread man cookie cutter (or other shapes) to cut out cookies. Lay cut cookies on the prepared baking sheet, 1 to 2 inches apart. Re-roll the dough as necessary to cut out cookies until dough is gone.

苦瓜黃豆排骨湯


苦瓜具清熱祛濕、利尿解毒及涼血止癢功效,除咗對治療熱毒、痱子及濕疹等病癥有幫助,仲可以緩解夏天暑濕感冒。而黃豆亦能利水祛濕,活血解毒,但尿酸高的人不宜多吃,以免引起痛風。

材料+做法:500克新鮮苦瓜+200克黃豆+250克排骨+3~44篇生姜。苦瓜去核切塊,用鹽水浸泡15分鐘,黃豆浸泡一下,全部食材用大火煲滾後,轉慢火煲1小時

雙豆淮山無花果蓮藕排骨湯


「豆中之王」花豆能祛濕、消除水腫及健脾壯腎,而赤小豆有解熱毒、利尿等功效。另外,蓮藕在煮熟後能健脾養胃、補氣養血及止瀉,很適合腸胃較弱的人食。

材料+做法:蓮藕+紅蘿蔔+赤小豆+花豆+淮山+無花果+陳皮+排骨。先將赤小豆+花豆浸泡1小時,水滾後放入全部食材,中火煲2小時。

冬瓜薏米排骨湯


冬瓜除咗可以利水祛濕、清熱排毒,仲有解暑功效,而薏米能消除浮腫,幫助消化,非常適合在夏天消暑。

材料+做法:冬瓜、排骨、薏米(少量)+2片姜。全部食材用大火煲滾後,轉小火煲2小時。

生熟薏米赤小豆祛濕湯


容易制作的生熟薏米+赤小豆祛濕湯,就連Sammi鄭秀文都經常飲!如果睡眠不足或覺得特別攰,可以加些圓肉,有效改善睡眠及心脾煩躁。

材料+做法:生、熟薏米、赤小豆(少量),先浸泡一下,再煲45分鐘至1小時。
